James Dravenack is the executive chef and manager of retail foodservice for the department of food and nutrition services at Rush University Medical Center.  He is responsible for the production, distribution and service of food in the cafeteria, coffee kiosks, catering, Searle Conference Center and Room 500 operations.  He has held leadership positions at several clubs and large department store food operations in the Chicago area. He is an instructor in clinical nutrition at Rush University and directs internship rotations in the retail foodservice area.  He is interested in culinology and food product development.
