Sarah Peterson is a nutrition support dietitian specializing in adult critical care. She is an integral member of medical intensive care unit multidisciplinary team. Additionally, she provides inpatient and outpatient medical nutrition therapy to adults with cystic fibrosis.
Sarah, along with members of the adult nutrition support team, precepts a nutrition in critical care rotation for dietetic interns. Sarah teaches a nutrition assessment course for the Department of Clinical Nutrition, during which interns learn the theory behind nutrition assessment principles and application to clinical practice.
Her research interests include identification of malnutrition in the hospital setting, calorie delivery in the ICU and changes in body composition associated with nutrition support.
